Jan Ostle is the Chef Owner of Michelin Green Starred, Wilsons Restaurant

Jan Ostle is a visionary culinary artist dedicated to redefining the gastronomic landscape through his renowned restaurant, Wilsons. With an unwavering commitment to sustainability, Jan has seamlessly woven his passion for exquisite cuisine with an ethos of environmental consciousness.

Wilsons' ethos reverberates in their meticulous ingredient sourcing, where a tapestry of local, small-scale, regenerative farmers and producers interlace their narratives. Each ingredient is a brushstroke, contributing to the masterpiece that graces diners' plates.

Jan Ostle's unwavering commitment to sustainability is evident not only in the restaurant's menu but also in its practices. Wilsons boasts a zero-waste kitchen, where every scrap is repurposed or composted. Energy-efficient appliances, rainwater harvesting, and a strong emphasis on reducing carbon footprint showcase Jan's holistic approach to responsible gastronomy. Jan said, "Sustainability is a term often bandied around for marketing purposes but, at Wilsons, we follow a 'ground-up' approach where we involve the whole team on the journey and encourage them to challenge our propositions. For us, sustainability is a viable economic model which works in our favour."

Nestled within the heart of Redland, Bristol, Wilsons emerges as a captivating gem—a petite, independently owned farm-to-table eatery. The year 2016 saw the inception of this culinary haven, a joint vision actualized by the synergy of partners Jan Ostle and Mary Wilson. Jan, a culinary virtuoso, honed his craft within the sanctums of the nation's most lauded kitchens. Meanwhile, Mary's upbringing within her family's restaurant, coupled with her immersion in the realms of biodynamic agriculture, bequeathed her a profound culinary insight.

The restaurant's name, a homage to Mary's family establishment—Wilson's, a London landmark long since dimmed by the passage of time captures the essence of heritage and legacy. Wilsons stands as a testament to their unwavering commitment to crafting an exceptional culinary experience deeply rooted in the terroir of their locale.
