With Michelin right around the corner, what better way to pass the time than to guess which restaurants will feature in the guide this year, and who better to guess than chefs with accolades?

"Michelin does its work, I dine in lots of restaurants with great pleasure but I am not the judge.

"There are those who deserve stars and don’t get them, others who have them that don’t deserve them, but I do my job as a chef and restaurateur, Michelin does its job as a guide. Because their judgement is a human judgement, of course they can’t be perfect, but it’s great to get Michelin stars – it’s not so great to lose them.

"I’ve dined at all of my former trainees, I have an opinion on the matter but I’m not going to rate them."
