Great British Menu chefs 2020: Niall Keating, Central heat

Ahead of Great British Menu heading to our screens this month, The Staff Canteen is introducing the competition’s contestants!

Niall Keating is the executive chef at the two Michelin starred, The Dining Room at Whatley Manor.

Born in Staffordshire, Niall got his first kitchen role in 2010 when he joined the Michelin starred, Bath Priory Hotel as a commis chef eventually climbing the ranks to become sous chef.

Three years later, he moved to Nottingham where he took on the role of chef de partie at Sat Bains’ eponymous two Michelin starred restaurant, where he remained for two years.

The chef then moved to San Francisco working with Corey Lee at the three Michelin-starred restaurant, Benu and in 2016, he moved again to Copenhagen and worked as chef de cuisine at the one-starred, Restaurant Kong Hans Kaelder with chef Mark Lundgaard Nielsen.

Joining the Michelin starred Whatley Manor in December 2016, Niall first showcased his range of menus at both The Dining Room and Grey’s Brasserie a month later in January 2017.

With his vast experience working for a range of Michelin starred chefs from across the globe, Niall’s own modern British menus draw inspiration from Korean, Japanese and classic French cuisines.
