Niall Keating is executive chef at the two Michelin starred, The Dining Room at Whatley Manor in Wiltshire.

Niall was born in Staffordshire. He got his first kitchen role in 2010 when he joined the Michelin-starred Bath Priory Hotel as a commis chef, eventually climbing the ranks to become sous-chef.

Three years later, Niall moved to Nottingham, where he took on the role of chef de partie at Sat Bains’ eponymous two Michelin-starred restaurant. He remained there for two years.

The chef then moved to San Francisco to work with Corey Lee at the three Michelin-starred restaurant, Benu.

In 2016, Niall moved again to Copenhagen and worked as chef de cuisine at the one starred, Restaurant Kong Hans Kaelder with chef Mark Lundgaard Nielsen.

Niall took over the reins of the kitchen of The Dining Room at Whatley Manor in December 2016, replacing former Michelin-starred chef, Martin Burge, who stepped down from the role to pursue new challenges.


During Niall's time at The Dining Room at Whatley Manor, the restaurant achieved their first Michelin star in September 2017 and a score of 7/10 in the Waitrose Good Food Guide. In January 2018, The Dining Room was also awarded three Rosettes in the AA Restaurant Guide 2019. Just 24 months later Niall and his team were awarded a second star in the Michelin Guide UK 2020 and  four rosettes in the AA Restaurant Guide 2020.

In addition to overseeing The Dining Room, Niall also took on the hotel’s more informal chalet-style brasserie, La Mazot, which was renamed Grey’s Brasserie in November 2017 after a short closure for refurbishment. Niall is also responsible for The Green Room, a private space for events and showcases.

The food style at the Dining Room, Whatley Manor

The food at Whatley Manor is full of flavour and originality offering two dining experiences with The Dining Room and Grey’s Brasserie.

Joining the Michelin starred Whatley Manor in December 2016, Niall first showcased his range of menus at both The Dining Room and Grey’s Brasserie a month later in January 2017.

With his vast experience working for a range of Michelin starred chefs from across the globe, Niall’s own modern British menus draw inspiration from Korean, Japanese and classic French cuisines.

In the Dining Room guests can enjoy a 12 course tasting menu for £99 or £169 with matching wines. Before Niall’s appointment it previously offered a seven-course menu for £110 (£186 with wine).

Typical dishes include spiced cracker, sesame, lime; oyster, seaweed mignonette; chicken fat custard, tamari, caviar; brown butter, buttermilk; mackerel, preserved raspberry, greens; tortellini, black; ‘risotto’, chorizo, raw scallop; cod, chicken broth, fermented turnip; aged beef loin, lettuce, pomme purée, red wine; salted rhubarb, umeshu, shiso; and chocolate, caramel, crème fraiche.

CODE Quarterly magazine included Niall Keating in their annual 30 under 30 list of young industry professionals to watch in 2018.

Niall took the title of Champion of Champions on Great British Menu 2020, and took part in the Great British Menu 2020 Christmas Special to celebrate key workers.

Outside of work, Niall practices extreme sports, and has taken part in the World's Toughest Mudder and Ironman events.
