Chef Career Advice

Based on her extensive experience working within the Culinary world, Sous Chef, Louisa May Matthews offers her advice to aspiring Chefs in an attempt to help them on their journey up the career ladder:

My name is Louisa May Matthews and I'm currently the Junior Sous Chef for Eton College in Windsor.

Don't be scared of hard work and come in with an open mind because there are so many avenues you can go into. I first went into the industry wanting to do fine dining and now I cater for 600 Boys 7 days a week, so it varies, so definitely come in with an open mind.

A Sous Chef can expect from our industry, That it is changing all the time and as I mentioned before there are loads of different avenues so don't be tied to one particular avenue to go down and don't let people influence you, you need to be sure what you want to achieve and the journey you need to go on. So were looking for a candidate not so much as a finished article as such but someone that has room to grow and really wants to learn, if their willing to listen, we’re willing to teach them.

So a Chef in catering for Sodexo can expect in catering for a very varied one, we cater for 600 boys 7 days a week. We also do the fine dining for 4 and 5 private functions, it's very varied and no days ever the same.
