Pamir Zeydan appointed as Kebab Queen's new head chef
Kebab Queen has appointed Pamir Zeydan as their new Head Chef, starting from 16 August 2023.
Pamir joins Kebab Queen with an impressive background in diverse fine dining establishments, and will bring unique approach to the restaurant’s innovative 10-seat counter dining service.
Pamir’s culinary journey began in Turkey, where his cooking is heavily influenced by Kurdish and Mediterranean traditions. His heartfelt and sustainable menu showcases authentic flavours, using ultra-seasonal ingredients to minimise waste.
Commenting on Pamir’s appointment, Stephen Tozer, co-founder of Kebab Queen and the Le Bab group, enthused about Pamir’s new role: "We are so excited to relaunch Kebab Queen with Pamir. He’s the perfect successor to Manu – he has a fascinating background,and his heritage couldn’t be more relevant to the restaurant. He’s a brilliant chef, but above all he is a wonderful guy with an amazing energy, and I think our guests are going to love him."
Having worked with renowned chefs who trained under culinary legends Paul Bocuse and Alain Passard, Pamir brings a wealth of experience to Kebab Queen.
Most recently, Pamir honed his skills alongside Manu Canales and Philli Armitage Mattin, gaining a deep understanding of Kebab Queen's distinctive service style.
Now, Pamir is ready to infuse his passion for the restaurant's unique relationship with food into his cooking, creating an immersive and connected dining experience.
Drawing inspiration from humble origins, Pamir aims to elevate traditional Turkish dishes and curate the ultimate Kebab Queen dining experience.
Guests can expect a menu that celebrates the essence of Mediterranean cuisine, offering both comforting and inventive dishes.
Among the highlights are Dover sole kebab served on an ironed hispi cabbage taco with roasted red pepper purée, and a Spit-roast Cag kebab of aged Dalesbred mutton with puffed pita, charred heritage tomato ragù, smoked Turkish yogurt, charred Carlston pepper, shallot, and sumac salad.
