How long have you been in this role?

16 years.

What experience and how many years would someone need in order to progress to the top level of the industry?

It is a life long experience you are always learning as long as you put in 100 hour weeks to start with, you will succeed. 

What are your ultimate top tips for someone looking to start a career in the hospitality sector?

  • Determination
  • Stamina
  • Ability to listen and learn

Who are the key Chefs and restaurants that someone should be speaking to and trying to gain experience with?

 Start from the bottom as a kitchen porter so you are aware of everything.

What are you looking out for on a CV or in an interview if someone was applying to work with you?

 They'd need to stand out, they need to know everything about my restaurant, they need to have eaten in my restaurant otherwise how do you know if you want to work with my food?
