How to make a Mustard dressing

Okay we are going to make a mustard and shallot dressing using some of the vinaigrette that I showed you how to make earlier, so we got our normal house vinaigrette we are going to add some shallots, the shallots I have are just finely diced and soaked in some cold water to remove some the acridness of these shallots and I've just drained them off so we are going to add 1 dessert spoonful of shallots

because it’s a mustard dressing we want to sing the mustard so a little bit more dijon and then a good dessert spoonful of whole grain mustard so again it has got to be mustard, just going to add a glug of extra virgin olive oil just to rebalance, quick taste and that's just what we are after very mustard, quite assertive and a lovely warm from the shallots.
