Though he was born in the UK, Alex was raised in San Francisco. His culinary passion can be traced back to his early childhood, with his grandfather and mother both playing influential roles in his understanding of and respect for ingredients. 

Alex's career path

Alex's first foray into the world of haute-gastronomie was at Alain Ducasse's New York restaurant under the direction of Didier Elena and Tony Esnault at Adour. He was there when restaurant won its Michelin star in 2008 and its second the following year. 

He then did a stint as chef de cuisine at Caviar Russe, which saw the restaurant receive a Michelin star in 2013.

When he returned to Europe, he took over at Hélène Darroze's restaurant at The Connaught, where he was executive corporate chef, maintaining the restaurant's two stars whilst also overseeing the chef's eponymous Michelin-starred establishment in Paris. 

In July 2018, Alex succeeded The Greenhouse's former executive chef, Arnaud Bignon, who spent six years at the helm and earned the restaurant's second Michelin star. Gary Rhodes won the restaurant's first star in 1996.

Despite it's somewhat new arrival to London's fine dining scene, Alex Dilling at Hotel Café Royal Restaurant has already made a significiant waves, garnering critical acclaim from diners, critics and food lovers who frequent the restaurant.

Alex's first standalone restaurant opened on the 1st Floor of  Hotel Cafe Royal - overlooking Regent Street - on 1st September 2022. The restaurant will see Alex deliver the finest ingredients taking inspiration from French classics.

AA Restaurant Guide

Alex's food is firmly grounded in French classic techniques, relying on (mostly British, but a lot of French) seasonal produce, focusing on bringing out their inherent dominant flavours.

In March 2023, Alex Dilling at Hotel Café Royal Restaurant was one of three UK restaurants to win the two star accolade from the Michelin guide. 

Commenting on Alex's restaurant and the experience that diners can expect, the guide said: "The eponymous chef has been given a discreet, intimate environment at the Hotel Café Royal in which to showcase his impressive and accomplished cuisine."

The guide added: "His dishes are exquisite in appearance and, like a seasoned orchestra, everything on the plate adds its own note of flavour to produce something harmonious and exhilarating. Whether Cornish sardines, Yorkshire rhubarb or Herdwick lamb, the kitchen knows how to bring out the best in its ingredients. The smart team offer service that is formal but free from stuffiness."
