Who is chef Ollie, MasterChef: The Professionals 2021 quarter-finalist?

Introducing Ollie, one of 32 chefs taking part in MasterChef: The Professionals 2021, airing on BBC One every Monday, Thursday and Friday from November 8th through to December 24th.

Ollie is a 23-year old English chef who works in France at Le Château de Berne, a Relais & Châteaux Hotel in the Provence region. A self-taught chef, Ollie was previously a chef de partie (CDP) at a London hotel. 

After impressing the judges, Michelin-starred chef Marcus Wareing, award-winning chef and restaurateur Monica Galetti and Gregg Wallace, with his chickpea panisses and aubergine dip

in the skills test, Ollie pulled the stops out for the signature challenge, preparing turbot on the bone with sauce Grenobloise, shrimp, browned cauliflower veloute and Cavolo Nero,  followed by a chocolate craquelin choux bun with blackberries and a hazelnut Crème Diplomate, securing a spot in the quarter-finals. 

On Friday 26th November at 8:30pm, Ollie will prepare a surprise dish based around the theme of colour for the judges, followed by two signature dishes for food critics Grace Dent, Jay Rayner and Tom Parker-Bowles.
