Amethyst's Carlo Scotto announces opening date for his new Vinum wine bar

Carlo Scotto, Chef Owner of Amethyst, will launch his new subterranean wine bar Vinum on 2 May.

Seating just 16 guests, the intimate downstairs space will echo the restaurant above, taking guests on an exploration of winemakers and varietals from across the globe, handpicked by Head Sommelier, Ennio Pucciarelli.

Carlo's extensive international travels have inspired the bar’s menu with signature wine flights, including the European or World flights, reflecting his favourite places, including tipples from Greece and pours from further afield, such as India and South Africa.

Vinum will also offer rare and vintage finds from Amethyst’s cellar which will be available by the glass, offering oenophiles a unique opportunity to try something a little more unusual.

Alongside the wine menu, guests can also enjoy a selection of small plates crafted by Carlo, showcasing the distinct and unorthodox flavours he has become known for.

Carlo’s innovative and unconventional approach to food will be reflected in the new menu with seasonally-changing snacks including homemade bread with Tête de Moine cheese & saffron caramel; Japanese scallops with wasabi caviar & teriyaki; and truffle arancini with parmesan cheese & gochujang mayo, expertly paired with the wine list.

Guests will enter Vinum Bar from the restaurant upstairs, catching a glimpse of the eye-catching bespoke chef’s table, before descending the staircase, through to the warmly-lit, intimate wine bar.

Designed by owners, Sahand and Laura Jalali to be a secluded spot away from the hustle and bustle of Mayfair above, Vinum is the perfect spot for guests to enjoy a drink or two before dinner.

A mixture of earth tones fill the space in deep auburn, chestnut and raven shades with the rustic bar situated at the back of the space with a small bar seating area, allowing for an immersive and intimate experience.

Open during the evenings from Tuesday to Saturday, Vinum will be the perfect spot for those looking to escape the busy streets of London and while away the hours over a glass or two.
