‘Full circle’ - Chef Tom Brown set to return to The Capital Hotel

Chef Tom Brown has announced a return to The Capital Hotel in Knightsbridge, for his latest venture.

It marks somewhat of a homecoming for Tom, who previously rose to prominence as head chef at the hotel’s restaurant Outlaw’s.

Tom then went on to open his own acclaimed Hackney-based restaurant Cornerstone in 2018, where he was awarded a Michelin star the following year.

Located in the heart of Knightsbridge, the new 28-cover restaurant will embody Tom’s signature style of clean, creative, and produce-driven cooking. The menu promises bold, fearless dishes showcasing exceptional quality and innovative techniques.

On the new restaurant, set to open in the spring, Tom said: “Returning to The Capital Hotel feels like coming full circle.

“This is where I developed my style and found the confidence to go onto open Cornerstone.

“It’s a privilege to have my name over the door of a restaurant where legends of my industry have worked, and I in turn hope to make my mark”.

Solomon Khaddour, general manager at The Capital, added: "We are delighted to welcome Tom back to The Capital Hotel, bringing his extraordinary talent and culinary artistry back to Knightsbridge.

“His innovative approach to seafood will redefine the dining experience at our hotel, and this partnership is a celebration of both Tom’s incredible talent and the strengthened vision of The Capital Hotel.”

Originally from Cornwall, Tom worked in restaurants around the south west, under the likes of Rick Stein and Nathan Outlaw.

Cornerstone closed in the summer of 2024. A few months earlier, Tom launched Pearly Queen, an oyster bar and seafood restaurant in Shoreditch.

The Capital Hotel is surrounded by shopping destinations such as Harrods, Harvey Nichols and Sloane Street, with Hyde Park nearby.
