A fundraiser has been created following the death of a much-loved chef.
Wayne Thomson was a respected chef known for his dedication to the hospitality world.
Donations raised from the fundraiser will go to Hospitality Action.
Founded in 1837, Hospitality Action is a UK-based charity that supports current and former hospitality workers facing challenging times, whether due to physical illness, mental health struggles, addiction, financial hardship, or personal crisis.
Background
Wayne began his career with formal training at Stratford-upon-Avon College and gained experience at prestigious establishments such as Claridge’s in London.
In 2010, he opened No 9 Church Street in Stratford-upon-Avon, a family-run restaurant that became a staple in the local dining scene.
After the closure of No 9 in 2021, Wayne continued his culinary journey as the culinary director at Niche and Bespoke, a Birmingham-based hospitality group.

A post on social media from Niche and Bespoke read: “It is with immense sadness and heavy hearts that we share the news of the passing of our colleague and dear friend, Wayne Thomson, our Culinary Director.
“Many of you knew Wayne not only for his exceptional talent and creativity, but for his unwavering passion and drive. As a founding member of the Niche and Bespoke team, Wayne played a pivotal role in shaping the identity of our business. Having trained in London at the prestigious Claridge’s Hotel, Wayne worked under many great chefs, before taking the reigns at some of the Midlands most sought-after hotels.
“His dream was to open his own restaurant, and this became a reality in 2010 in partnership with our CEO Daniel; achieving recognition from Michelin, Harden’s and The Good Food Guide. While the pandemic in 2020 led to the closure of the restaurant a couple of years later, it marked a new chapter where Wayne poured his heart into helping build Niche and Bespoke into the business it is today.
“Wayne left us suddenly and a hole as huge as his heart has been left behind. He will be deeply missed by friends, colleagues, clients and partners alike, much more than words can say. Our thoughts are with Jeannette and his family and our Niche and Bespoke family during this difficult time.”
The Parsons Table also paid tribute to its 'friend', saying: "A few weeks ago, one of Lee’s oldest friends from his Claridge’s days, sadly passed away suddenly. Wayne, affectionately known as Tommo, leaves behind a loving wife, friends and family who are all devastated by his loss. In his memory, a fundraising page has been set up for a cause supported by Tommo and many in the hospitality industry Hospitality Action . If you can spare a few pounds, we’d appreciate the nod towards something worthwhile and in memory of a friend lost but not forgotten. You will be missed Tommo."
