This year's Hotel Expo staged at the BIC between 15-16^th 2011 saw some 750 competitors compete across the two days with chefs from across the south of England. The Staff Canteen was proud to sponsor the Lamb dish, where the candidates had thirty minutes to produce 2 portions, suitable for a fine dining restaurant.
