Shauna Froydenlund is the joint chef patron of Michelin-Starred Marcus in London with her husband Mark.

Shauna reached the regional final two years ago and is back, competing on Great British Menu for the second time!

Originally from Londonderry, Shauna moved to England to study culinary

arts, before taking a job at Gordon Ramsay’s restaurant Pétrus which was run by Marcus Wareing.

Shauna has been loyal to Marcus throughout her career, being made demi chef de partie on the pastry section when Marcus opened his eponymous restaurant at London’s Berkeley Hotel. Marcus is also where she met her now-husband and joint chef-patron Mark Froydenlund

Shauna's menu is very personal, celebrating her passion for children’s literature and her love of reading to her daughter.

Small Contribution. Big Impact.

The Staff Canteen has always been more than a website—it’s a community, built by and for hospitality. We share the wins, the challenges, the graft, and the inspiration that keeps kitchens alive.

We believe in staying open to everyone, but creating this content takes real resources. If you’ve ever found value here—whether it’s a recipe, an interview, or a laugh when you needed it most—consider giving just £3 to keep it going.

A little from you keeps this space free for all. Let’s keep lifting the industry, together.
