Pastry chef Hesky Meyer moves from Gordon Ramsay’s flagship to Bonheur

Pastry chef Hesky Meyer has announced his departure from Restaurant Gordon Ramsay, where he most recently held the role of Pastry Sous Chef.

The global pandemic led to furloughs, but it also opened unexpected doors. One evening, while scrolling through Instagram, Hesky came across a job posting for Restaurant Gordon Ramsay. Despite having no background in Michelin-starred dining or fine dining at all, he decided to apply. To his surprise, he was accepted.

The move into one of the world’s most renowned kitchens was transformative: suddenly surrounded by tasting menus, intricate plating and the relentless pace of service, Hesky discovered the artistry of Michelin dining one dish at a time.

In a message shared on social media, Hesky reflected on his time at the three Michelin-starred Chelsea restaurant, describing it as “a true honour” to return and experience the kitchen from a new perspective.

“There are too many people to thank over my years at RGR,” he said, offering special acknowledgement to chef Kim Ratcharoen. “Watching you take over the reins was beyond inspiring and shows where hard work, dedication and commitment can take you. Thank you everyone at RGR for putting up with me! You are all family.”

The move marks the close of an important chapter in Meyer’s career and the beginning of an exciting new one. He has confirmed that he will be joining Bonheur by Matt Abé as sous chef, working under the leadership of the three Michelin-starred executive chef of Restaurant Gordon Ramsay.

Looking ahead, Meyer said: “I am so pleased to say

that I will be joining the team at Bonheur by Matt Abé as Sous Chef. Big things to come and so grateful to Chef Matt Abé for the opportunity. Watch this space, this is going to be MASSIVE!”

The website for Bonheur, which means ‘happiness’ in English, is also now live, describing the offering as: “A fine-dining experience designed to inspire complete contentment. A celebration of seasonality, community, and craft.”

Matt told The Standard: “Bonheur translates to ‘happiness’ in French, so for me, Bonheur is a place of escapism. We’re breathing new life into an iconic site, creating a space that is elevated without overwhelming; that is warm, timeless, and comfortable; and that celebrates community, craftsmanship, and the bounty of the British Isles.”

According to his company website, Gordon Ramsay has around 90 restaurants, with 18 bars and restaurants in London alone.

Some of Gordon's London restaurants include the three Michelin-starred Restaurant Gordon Ramsay, Chelsea; the one Michelin-starred Pétrus by Gordon Ramsay in Knightsbridge; and the Savoy Grill - Gordon Ramsay, which previously held one Michelin star. 

The celebrity also has or currently owns restaurants in Scotland, Dubai, the US, France, Japan, Canada, Ireland, Qatar, Australia, Italy, Hong Kong, Singapore, the Czech Republic and South Africa.

The chef received an OBE in 2006 for services to the industry.
