Industry pays tribute to chef David Wilson of the Peat Inn

The Staff Canteen

Hospitality professionals are mourning the loss of a great chef today, after  celebrated Fife cook David Wilson of the Peat Inn passed away at the weekend.

The chef, who took the reigns in the kitchen at The Peat Inn in 1972, went on to earn Scotland's first Michelin star in 1986, and has remained in his role until 2006 when the business was sold to now chef proprietor Geoffrey Smeddle.

In his 33 years at the helm alongside his wife Patricia, David Wilson earned the admiration and respect of many, expanding the influence of Scottish cuisine locally and internationally.

Based in the village of Peat Inn near Cupar, the Peat Inn dates back to the 1700s, and Geoffrey has continued in David's footsteps of serving a seasonal menu of local Scottish ingredients, earning back the restaurant's Michelin star in 2010.

The team at the Peat Inn shared the news on their social channels, and received a mix of messages of condoleances and memories shared by previous work colleagues, fellow industry members who knew David Wilson personally and loyal diners.
