James Lowe, co-owner and chef of Lyle's, and general manager John Ogier have confirmed that their new wine bar, bakery and restaurant, Flor, will open its doors at Borough Market on July 11th.

The Lyle's team confirmed the news on Instagram, much to the excitement of its followers:

  • at The Stock Exchange Hotel in Manchester
  • Former Maaemo head chef Jordan Bailey on what it takes to open the restaurant of your dreams
  • The restaurant, which will replace Patisserie Lila on the Borough Market site, will draw inspiration  from the  buvettes of Paris and the pintxos bars in San Sebastián, and has been described as "Lyle's little sister", with dishes on the menu including cured Mangalitsa and Comté  in fermented potato bread, lamb ribs with yoghurt and black lime and chocolate sabayon tarts.

Customers not wanting to dine will be invited to nip in for a loaf of brioche or sip on a glass of specially-selected wine.

    Small Contribution. Big Impact.

The Staff Canteen has always been more than a website—it’s a community, built by and for hospitality. We share the wins, the challenges, the graft, and the inspiration that keeps kitchens alive.

We believe in staying open to everyone, but creating this content takes real resources. If you’ve ever found value here—whether it’s a recipe, an interview, or a laugh when you needed it most—consider giving just £3 to keep it going.

A little from you keeps this space free for all. Let’s keep lifting the industry, together.
