Jordan Bailey and Majken Bech-Bailey, the husband and wife team behind AIMSIR at the Ciff at Lyons in Co Kildare, have announced that they are leaving the restaurant and the wider Cliff Group.

An announcement on Jordan’s social media said: “After five years, myself and Majken have decided that we will be moving on from AIMSIR and the wider CLIFF Group. Since our first days here, my wife and I have married, had a baby girl, and have fallen in love with Ireland but, although the current team at AIMSIR is the finest I have ever worked with and I am immensely proud of what our team delivers every service, we both feel the time is right to move on.”

Without revealing too much information on pair’s future plans, Jordan’s statement added: “We both know exactly what we want to do next in Ireland and hope to announce that later in the year. We would like to thank all of our exceptional team who have worked with us at AIMSIR since we opened, and all our wonderful guests, friends and suppliers. Majken and myself have received nothing but widespread welcome, positivity and support since we came to Ireland, something we have appreciated more than I can ever say, and we look forward to our next chapter in this country.”

AIMSIR broke records in 2019 when it became the fastest restaurant in the history of the Michelin guide to achieve two stars after they secured them within four months of opening.

Since then, CLIFF owners Barry and Gerri O’Callaghan have committed a significant ongoing investment in the restaurant and its adjoining gardens.

Commenting on Jordan’s announcement, CLIFF Owners Barry & Gerri O’Callaghan, said: “We want to thank Jordan and Majken for the part they have played at AIMSIR. In a very short period, the team at AIMSIR has achieved amazing things, establishing a restaurant of world renown. Their contribution to this success is recognised and respected by all of us and we wish them well.”

The pair added: “AIMSIR has an ethos of creating exceptional cuisine utilizing indigenous ingredients found on the Island of Ireland. We remain committed to the exacting standards MICHELIN inspires, with a renewed ambition to become one of Ireland’s first three-star restaurants. We are currently in the process of advancing some exciting new developments; key amongst them is the appointment of our next Chef Patron. In doing so, we wish to challenge and inspire our AIMSIR team to deliver on our shared vision of achieving a third MICHELIN star.”

Jordan’s last day of service at Aimsir is on Saturday April 15th.
