Restaurant Andrew Fairlie to host one off collaboration with Waterside Inn

Michelin starred chef, Andrew Fairlie will be working with father and son, Michel and Alain Roux as part of a special two night collaboration on October 20-21, 2016.

This will mark the first time Michel and Alain have hosted together outside of the Waterside Inn.

A six course menu has been created by the chefs which will incorporate signature dishes from both restaurants along with a special selection of wines and champagnes.

Speaking to The Staff Canteen, Andrew Fairlie said: “We were just kicking a ball around and Michel thought it would be a great idea for Alain to come up as he was coming to Gleneagles with his wife anyway and that’s really where the idea was born. Alain and I put a menu together with some of our restaurant dishes and some of Alain’s dishes.

“October was just an ideal opportunity as the kids are back at school and Michel is over. It’s coincidental Michel will be over in the country so it’s the only time we could have done it really.”

Dishes will include The Waterside’s Terrine de Foie Gras au Blanc de Volaille Enrobé de Pistaches, Accompagnée de Raisins en Ratafia, paired with a Jurançon Moelleux from the Pyrenees, and Andrew Fairlie’s signature Home - Smoked Scottish Lobster accompanied by magnums of Krug Grande Cuvée Champagne.

Alain Roux said: “I have dined many times in Andrew’s beautiful dining room in the care of his impressive Front of House brigade. I can’t wait to return to the restaurant, but this time to cook alongside Andrew and his team.”

Since becoming the very first Roux Scholar in 1984, Andrew Fairlie has developed a close relationship with the Roux family.

Michel Roux, OBE said: “Andrew Fairlie’s restaurant is a temple of gastronomy in Scotland. I am so proud of my first scholar. His achievement is remarkable and I can’t wait to see him again in action at the helm of his enterprise”.

Restaurant Andrew Fairlie at Gleneagles is also celebrating its 15th anniversary this year.

Andrew said: “15 years is a milestone in the journey for any restaurant, and I simply couldn’t think of a better way to celebrate this at my restaurant. My team and I are very excited about cooking alongside Alain - who is undoubtedly one of the finest chefs in the UK – with the rare and special honour of having my mentor and great friend Michel looking over our shoulders. This unique event is itself another milestone.”

The Waterside Inn in Bray is the longest-standing three star Michelin restaurant outside France, having held this exceptional accolade since 1985.
