Roy Brett’s Ondine opening at Seaton House early next year

Roy Brett’s Ondine Oyster & Grill have announced they are set to open at Seaton House in St Andrews in February 2025.

Seaton House is a new 40-bedroom luxury hotel which overlooks the town’s West Sands beach.

Roy opened his acclaimed seafood restaurant Ondine in Edinburgh in 2009, just off the Royal Mile.

Ondine say they will be providing Seaton House’s restaurant and oyster bar with “à la carte and all day dining, using the finest locally sourced ingredients and expertly selected wines and whiskeys”, adding: “Expect a culinary experience like no other.”

The seasons, suppliers and produce of Fife will be utilised on the menu for the latest offering in St Andrews.

 
 
 
 

Ondine have this week advertised for an experienced restaurant manager to head up the new venture.

Roy won The Staff Canteen’s 2021 chef of the year award.

He started out at Caledonian Hotel, before heading to London to work with Mark Hix and Rick Stein, before launching Ondine.

Roy has had to overcome challenges at Ondine, notably long-term structural works around the building on Edinburgh's George IV Bridge and also a staff shortage after Covid lockdowns, but he can now look to the future with the new venture.
