Massimo-Bottura-27-by-Per-Anders-Jorgensen-square-edit-624x519World-renowned Italian chef Massimo Bottura is to collaborate with the London branch of burger chain Shake Shack on a limited edition burger for one day only. The collaboration is happening as part of celebrations for the week’s release of his first English language cookbook, Never Trust a Skinny Italian Chef, and the chef will appear at the Covent Garden Shack on the morning of November 9th to serve the burgers, greet fans and sign copies of the book. The Emilia burger, priced at £8.25, has been crafted by Bottura and the restaurant’s culinary director Mark Rosati, using the flavours of Massimo’s favourite Italian region, as he explained: “I’m especially excited to be bringing the flavours of my beloved Emilia-Romagna – cotechino sausage, parmigiano, and balsamic vinegar – my flesh, bones and blood – to Covent Garden.” Completing the blend of Aberdeen Angus beef, cotechino sausage and parmigiano reggiano will be salsa verde and Villa Mandori balsamic mayonnaise made from the chef’s own Atrigianale balsamic vinegar. “London is an incredible city, so vibrant and accepting of different cuisines. I can’t imagine a better place to serve my burger in evolution!” he added.Emilia Burger - Evan Sung-SQUARE Massimo has been called “The Jimi Hendrix of Italian chefs” by American chef Mario Batali and opened the restaurant Osteria Francescana in Modena, Italy in 1995. Since then he has earned three Michelin stars and the restaurant is currently ranked third in The World’s 50 Best Restaurants awards. His restaurant also achieved near perfection with the highest vote ever – 19.75 out of 20 in the l’Espresso dining guide. The Shake Shack chain is a modern day ‘roadside’ burger stand specialising in fresh, simply high-quality food at great value. Having originally opened in 2004 in NYC’s Madison Square, it now has multiple branches across US cities, as well as international locations in London, Istanbul, Dubai and more. Only 500 of the burgers will be served on a first-come, first-served basis, and the normal menu will be available throughout the day as well.
