The Michelin Guide has decided to knock a star off three Michelin star chef Guy Savoy’s Parisian Monnaie de Paris restaurant in a shock announcement.

Guy has held Michelin's top three-star status at his Monnaie de Paris restaurant since 2005 and is considered internationally as one of the world's greatest chefs.

The story reported originally by France24 ruled that the decision from Michelin came just months after Guy was named the best chef in world for the sixth year running by La Liste.

As an ambassador for the French "art de vivre", Guy has built a reputation for pointedly rejecting foods trends and whilst offering his voice in the French version of Pixar film Ratatouille.

Despite the chef’s towering reputation, it did not stop Michelin downgrading his establishment to two stars in its latest edition set to be published next Monday.

As well as Monnaie de Paris, Christopher Coutanceau’s upmarket seafood eatery in La Rochelle also lost star with a series

of restaurants expected to be downgraded.

Speaking to French media, Head of the Guide Gwendal Poullennec said: "These are exceptional restaurants, so you can imagine that these decisions are carefully considered, supported by numerous visits from our inspectors throughout the year."The reasons behind the guide's decision to downgrade a restaurant are not made public and are communicated only to the chefs involved.

Michelin's decision to downgrade restaurants is always hugely controversial within the culinary world following Bernard Loiseau's suicide in 2003, after The Gault Millau guide downgraded his restaurant from 19/20 to 17/20.

Michelin downgrades have also prompted public disagreements and event court cases.

In 2019, Chef Marc Veyrat unsuccessfully took the guide to court after his restaurant was stripped of a star prompting the chef to announce he never again wanted to see a Michelin inspector in any of his restaurants.
