Tom Sellers to launch five new dining concepts at Stoke Park this autumn
Stoke Park, the historic Buckinghamshire estate regarded as the UK's first country club, will enter a new chapter this autumn when chef Tom Sellers launches five new dining and drinking concepts across the 300-acre site.
The follows an extensive restoration, with the new launches coming from October 2026.
Tom has created the collection of five dining and drinking spaces working alongside chefs Dom Robinson and Tom Phillips, with menus shaped by British culinary history, seasonality and provenance, and produce drawn from the estate's own kitchen garden as the seasons change.
Five dining concepts, one estate
The centrepiece is The Penn, named after John Penn, a 48-cover flagship restaurant with a private dining room seating eight.
The Penn will serve an à la carte menu shaped by British culinary history, seasonality, provenance and classical French technique, with dishes including terrine of spiced pig's head with Scottish langoustine, roast wild sea bass with Orkney scallop, fish of the day en papillote, and venison Wellington Rossini.
Produce from the Stoke Park Kitchen Garden will inform the menu as the seasons change, led by Kate Mannery, former head gardener at Le Manoir aux Quat'Saisons.
Alongside The Penn, four further concepts will offer dining and drinking for every occasion. The Piano Bar will focus on classic cocktails, including an elevated martini selection, alongside 100 Hills English sparkling wine and a list with a strong representation of American wines.
The Terrace & Glasshouse will bring a lighter, more informal food style to the estate, with dishes such as sourdough flatbread, seasonal salads and rigatoni with venison ragu, alongside pizzas and barbecue on the terrace. It will open each spring and summer, with private hire available throughout the year.
The Tea Room will serve teas, coffees, freshly baked viennoiserie and signature Stoke Park scones, while The Clubhouse will be open daily with a menu of pub classics alongside Indian cuisine.
The estate's wine cellar has been curated by Carolina Seibel, group head of beverage at HiStory Hospitality, with the bar and cocktail offering led by Giuseppe Masala, beverage manager. Studio Shayne Brady has overseen the restaurant and bar interiors, bringing a renewed design language across the estate's dining spaces.

Tom is chef patron of Restaurant Story in London, which he opened in 2013 at just 26 years old, earning a Michelin star within five months and a second in 2021.
His cooking is defined by seasonality, storytelling and provenance, and his wider HiStory Hospitality portfolio spans Restaurant Story, Story Cellar, a Parisian-inspired rotisserie and wine bar in Covent Garden, Gwyn's Bakery in Horsham, and Once Upon a Time, an events concept.
In July 2026, Tom also opened MOR at the Carbis Bay Estate in St Ives, an ocean-inspired restaurant celebrating Cornwall's produce and coastline.

Stoke Park's story so far
Stoke Park is a 300-acre estate in Buckinghamshire dating back over 1,000 years, with historic grounds designed by Lancelot 'Capability' Brown and a screen history that includes Goldfinger and Bridget Jones's Diary.
It is located 35 miles from London, 15 minutes from Paddington to nearby Slough station.
The news follows Stoke Park's acquisition by Reliance Industries Limited, the Indian conglomerate led by chairman Mukesh Ambani, in 2021 for a reported £57 million, and comes after a period of renovation across the estate.
Golf and events have remained available to book throughout, while the relaunch of the hotel, spa, wellness programme and racquet sports will be announced in due course.
