One to Watch

The Staff Canteen

Darlington-born Sean Wrest, then head chef at Michelin-starred Roots in York was named One to Watch in the TSC Awards 2020.

Sean started his career working at the the Sandpiper Inn in Leyburn, followed by stages at The Fat Duck in Bray as well as at award-winning Oslo restaurant, Maaemo.

He then joined the

Banks family at The Black Swan in Oldstead, before leaving to help open Roots as the restaurant's head chef. Since winning the award (and a Michelin star), Sean has stepped away from his role at Roots to take some time out and plan the launch of a restaurant with his partner, Sam Haigh.

Small Contribution. Big Impact.

The Staff Canteen has always been more than a website—it’s a community, built by and for hospitality. We share the wins, the challenges, the graft, and the inspiration that keeps kitchens alive.

We believe in staying open to everyone, but creating this content takes real resources. If you’ve ever found value here—whether it’s a recipe, an interview, or a laugh when you needed it most—consider giving just £3 to keep it going.

A little from you keeps this space free for all. Let’s keep lifting the industry, together.
