- 50g burnt onions charred on the grill
- 50g gravy
- 15g béarnaise
- Pinch Maldon sea salt
- Pinch cracked black pepper

Lightly chargrill the slices of sourdough and set aside.
Season and cook the Scotch Beef fillet to medium rare then slice wafer thin and season again with the Maldon sea salt and pepper. Slice and stack onto sourdough.
Warm the gravy up with the burnt onion and pour over the sliced Scotch Beef steak then spoon the béarnaise over the top.
Add the second slice of sourdough, cut in half and skewer.
