Slow cooked Shoulder of Lamb

Lamb recipes tend to be exceptionally varied, with meals that offer classic comfort food as well as dishes that boast a more delicate, refined flavour. Take a look at the Slow cooked Shoulder of Lamb recipe below as tried and tested by our professional chefs.

Ingredients

  • Whole shoulder of lamb
  • Garlic, rosemary, white onion, leek, carrots, celery, stock and red wine

Method

Sear the shoulder to get a golden brown crust sealing in the juices, prod with garlic cloves and rosemary, place on tray with mirepoix , add stock and a good splash of red wine, cover and let the oven do its magic (20min on 180C, 2h on 140C)- until it literally falls off the bone!
Enjoy with seasonal vegetables, roasts and gravy made with juices from the roasting tray...oh and wine obviously :)
