Wild Garlic Farmhouse Loaf

Wild garlic is seasonal from late February until June. This easy Wild Garlic Farmhouse Loaf recipe is full of flavour.

Ingredients

  • 2kg strong bread flour
  • 180g unsalted butter
  • 6 tablespoons salt
  • 48g dried yeast
  • 1200ml tepid water
  • 400g wild garlic
  • 50ml olive oil

Method

• Mix yeast and water together and leave to activate for 10 minutes
• Place flour, butter and salt in a mixing bowl and attach the dough hook
• Start the mixer and slowly pour the yeast mixture into the mixer to combine the dry ingredients
• Roughly chop the wild garlic and add to the dough mix
• Add the garlic into the dough mix and leave mixing to create the gluten within the bread for 15 minutes
• Add the olive oil into the mixer and allow to be mixed well to create a silky dough,
• Make four even dough balls and leave to prove for 15 minutes
• Shake some excess flour over the loaves and place in the oven at 180’c for 20/25 minutes or until it sounds hollow
•Leave to cool on a wire rack until ready to eat
