Blue Steel Burger with Scotch Beef

1. Dice the meats 5cm onto a tray keeping separate.
2. Mince all the short rib through the fine mincing plate.
3. Mince all the bavette through the coarse plate.
4. Combine the meats gently. Season with salt and preserve and combine mix.
5. Work to bind, portion at 175g and form into ‘balls’.
6. From the ball press and shape to give a patty 1.5cm thick approx..
7. Cook on a griddle 3 minutes each side approximately. Once the Scotch Beef Patty is turned top with the Bacon Jam and Shitakes and cloche for 30-45 seconds. Add the blue murder and cloche again for a further 30 seconds.
8. Toast a bun on the dry griddle and build the burger as listed above.
