caramelised milk sorbet

This is a great recipe which adds a touch of luxury to citrus desserts.

Ingredients

  • Milk 1ltr
  • Liquid Glucose 100g
  • Caster Sugar 200g
  • Vanilla Pod 1
  • Cream 50mls
  • Water 75mls

Method

Put Water, Caster Sugar and liquid Glucose into a heavy based pot, Bring to the boil. Let the mixture boil until it is a light caramel then add the Cream and Milk. Bring backto the boil and remove from the heat leave to cool then add to the icecream maker and churn for approximately 30 mins. Store in a suitable container and place in freezer at -18c
