coconut broth

Such a simple recipe but it tastes so good, works very well with seabass

Ingredients

  • 3 litre coconut milk
  • 350g sliced shallot
  • 120g sliced red chillies
  • 4 sticks lemongrass sliced
  • 10 kaffir lime leaves
  • 400ml lime juice
  • 400g sugar
  • 350ml thai fish sauce

Method

put everything in a pot and bring to boil and simmer for 20 minutes
very simple but goes great with seabass, seabream or mackeral
