Cod Cheeks-pan fried in butter

Cod is a fantastically flaky fish that offers the versatility to be paired with a range of delicious flavours - Why not give the Cod Cheeks-pan fried in butter recipe a try yourself? This tempting starter was cooked by Jamie Bridgett (representing Cheshire) during the 2010 North West Young Chef Final.

Ingredients

  • 1 shallot
  • 1 red skin potato
  • 1 clove of garlic
  • Juice of ¼ of a lemon
  • 50g fish trimmings
  • 50g smoked haddock
  • Chives
  • 75ml white wine
  • 100ml Double cream
  • Oil(for cooking)
  • Butter(for cooking)
  • 2 slices ham

Method

Sweat off the shallots, garlic, half the leek and the fish trimmings in oil then add a little butter.
Add wine and reduce
Add lemon, then cream and simmer for a few minutes.
Pass, season, the reduce a little more.
Add diced smoked haddock and diced blanched potato.
Finish with chives serve in bowl with cod cheeks on top and garnish with ham crisp.
