- 1 red skin potato
- 1 clove of garlic
- Juice of ¼ of a lemon
- 50g fish trimmings
- 50g smoked haddock
- Chives
- 75ml white wine
- 100ml Double cream
- Oil(for cooking)
- Butter(for cooking)
- 2 slices ham

Method
Sweat off the shallots, garlic, half the leek and the fish trimmings in oil then add a little butter.
Add wine and reduce
Add lemon, then cream and simmer for a few minutes.
Pass, season, the reduce a little more.
Add diced smoked haddock and diced blanched potato.
Finish with chives serve in bowl with cod cheeks on top and garnish with ham crisp.
