Croquetas de jamón – Ham croquettes

Croquetas are one of Spains favourite snack foods. Making them with a Thermomix is easy and time-saving as the breadcrumbs are made in just a few seconds and the bechamel sauce, so often used in Spanish dishes, is stirred and cooked perfectly for you every time in the Thermomix.

Ingredients

  • 150g cooked ham or serrano ham
  • 2 hard boiled eggs, peeled and halved
  • 50g virgin olive oil
  • 100g butter, in pieces
  • 30g onion, cut in quarters
  • 170g plain flour
  • 800g milk
  • Nutmeg, salt and cayenne pepper to taste
  • Flour or fine dry breadcrumbs to coat the croquettes

Method

1. Make the breadcrumbs by crumbing pieces of dry bread at Speed 10. Tip out and set aside.
2. Turbo pulse the ham very briefly about 5 times until chopped. Tip out and reserve.
3. Chop the eggs for 2 seconds on Speed 4, tip out and reserve.
4. Weigh the oil, butter and onion into the TM bowl and cook for 3 minutes/Varoma Temperature/Speed 3.
5. Add the 170g flour and cook for 1 minute/100C/Speed 2.
6. Add the milk, nutmeg, salt, cayenne. Mix for 10 seconds/Speed 6.
7. Add 2tbsp of the chopped ham and cook for 7 minutes/Varoma Temperature/Speed 4.
8. When the machine has stopped, leave it to rest a few minutes, then mix in the rest of the chopped ham and eggs by hand with the spatula. Taste and adjust the seasoning.
9. Empty out the mixture on to a floured tray and leave to cool. Refrigerate all day or overnight, covered with cling film.
10. Shape into croquetas (little sausages) 1.5cm thick and 3 to 4cm long.
11. Chill again for at least an hour, dust lightly with flour or breadcrumbs then fry in hot oil until golden brown.
