Danwake with yoghurt sauce

On the menu at Chishuru (serves two)

Ingredients

danwake dough

  • 100g gram flour
  • 70g tapioca flour
  • 12g moringa flour
  • 12g nutritional yeast
  • 60g hot water with a few drops of lye water (alkaline water)
  • Seasoning to taste
  • 60g cubed blanched turnip

baobab sauce

  • 15g caramelised yoghurt
  • 50g baobab powder
  • 100g caramelised onions
  • 200g vegetable stock
  • 3g ground Uda (or grains of selim)
  • 25g butter cubed
  • 2 cloves
  • 5g ground aniseed
  • Pinch of cayenne pepper

Method

danwake dough

Mix all dry ingredients in blender
Add hot water gradually until dough is formed
Knead for mins wrap in cling film and allow to rest before portioning
Cook in boiling water, when it rises to the top, remove, and mix with warmed turnip

baobab sauce

Combine all, except butter, into blender gradually add the butter until emulsified.
Pass and adjust seasoning.
