- 45g Dextrose sugar
- 125g Chocolate 70%
- 30g Butter
- 20 Egg Yolks

Ingredients
Method
Melt chocolate to 40ºc. Add butter and yolks.
Whip whites and dextrose and salt to meringue.
Fold the two mixes together and bake in oven 180ºc with vapour if poss.
The cooking is quick, 3/4 mins or until the mix has 'set'.
Remove from heat.
Serve warm.
