Fluffy and Light Cheese Scones

Here is a quick recipe for delicious and fluffy cheese scones. Having used a recipe in my first kitchen job i found flaws in it i changed it slightly however the slight changes make a big difference! These scones can be baked straight away or frozen in dough form for upto 3 months and then baked at a high heat for about 25 minutes.

Ingredients

  • Makes Approximately 30+ Large Cheese Scones:
  • 1kg Self Raising Flour
  • 250g Unsalted Butter
  • 80g Baking Powder
  • 50g Paprika
  • 1 Tbsp English Mustard
  • 250g Mature Cheddar Cheese (grated)
  • 6 Large Eggs
  • 500 ml Milk

Method

Using a mixing bowl:
Mix the butter, flour ,cheese, baking powder and paprika together until breadcrumbs are formed.
Add your mustard and mix again.
Add your mix of eggs and milk until all of the mixture is combined and still wet
Heavily flour your work surface and scrape all of the dough out of the bowl onto it.
Using a large sized cutter, cut the scones out and place on a greased or covered baking tray.
Cover the finished cheese scones with a little extra grated cheese.
Bake in the over for 20-25 minutes or until golden brown around the edges.
