Lemon fluid gel

I know Im doing a lot of fluid gels, but this is different, the process is similar, however due to the high acid of lemon, normal rules do not apply

Ingredients

  • 800 mls WATER
  • 150gm SUGAR
  • 4gm SALT
  • 6gm LEMON ZEST - FINELY SLICED, NO PITH
  • 0.2gm SAFFRON THREADS
  • 18gm AGAR-AGAR
  • 250mls LEMON JUICE

Method

PLACE ALL INGREDIENTS EXCEPT THE AGAR INTO A PAN AND BRING TO THE BOIL, REMOVE FROM HEAT AND INFUSE FOR 10 MINUTES, PASS AND BLAST CHILL,
BLITZ THE AGAR INTO THE LIQUID, AND BRING TO NEARLY BOILING (90C), PASS INTO A CLEAN CONTAINER AND BLAST CHILL
BLITZ THE BLOCK WHEN COLD UNTIL SILKY SMOOTH
BOIL THE AIR OUT IN A VAC-PAC MACHINE
