lemon sorbet

best lemon sorbet i have tasted, has almost a lemonade flavour.


  • 875g water
  • 500g lemon juice
  • 375g sugar
  • 250g glucose
  • 5g earl grey tea
  • 7.5g trimoline


bring the water to the boil, add tea and allow to infuse for 2min. stir and pass. add the sugar and glucose and heat to 85 degrees, cool and leave for 4hrs, add lemon juice and churn.
