BIG MAMMA ANNOUNCES NEW COOKBOOK DEDICATED TO ALL THINGS PASTA

‘Big Mamma: Pasta’ brings together 150 Italian pasta recipes, from classic ragùs to homemade orecchiette, and will be published on 8 October 2026, priced at £26

Following its 2024 title ‘Big Mamma: Italian Recipes in 30 Minutes’, the Big Mamma team behind La Bellezza is set to launch a cookbook on one of the greatest treasures of Italian culinary heritage: pasta.

The book explores the full diversity and creativity of Italian pasta, both past and present, through 150 iconic recipes and eight thematic chapters, from dried and fresh pasta to the shaping and moulding of pasta dough.

Recipe highlights include a mixture of classic recipes, bakes and salads, as well as sweet dessert variations made from the same dough, plus plenty of tips and anecdotes from the team’s chefs to help readers become true pasta experts.

Readers can learn how to hand-shape Apulian orecchiette, Tuscan pici, and tagliatelle rolled out according to Emilian tradition, as well as the essential basics including the different types of flour, the art of mantecatura for perfectly creamy sauces, and the utensils that make all the difference, from pasta machines to gnocchi boards and the Abruzzo chitarra.

Each recipe, from Sunday lunch Spaghetti Scarpariello, to Tagliolini al Tartufo worthy of a gourmet dinner, not forgetting Rigatoni con i Broccoli arriminati or Gnocchi Nerano, is enhanced with an Italian song to groove to whilst cooking, alongside secrets passed down through Big Mamma’s chef’s family traditions.
