Quail amongst the brush    A beautiful autumn dish of quail and very seasonal at moment . . Pan fried sous-vide quail breast  with confit leg wrapped in kattafi pastry,  quail meat and egg scotch egg , chervil root puree,  radicchio and nasturuim leafs finished with quail bone and sea bucktorn infused jus.
