Sune – the neighbourhood restaurant on Hackney’s Broadway Market – has appointed Fabien Spagnolo as Head Chef.
Self-taught and originally from Nîmes in the south of France, Fabien began his culinary career in London at Pollen Street Social, before joining Grégory Marchand’s Frenchie in Covent Garden. He went on to cook at Casa Fofo in Hackney and Crispin in Spitalfields, alongside residencies and collaborations in London and France. Most recently, he led the kitchen at Bar Crispin in Soho for the last three and a half years, where his food was known for its simple, seasonal and elegant approach.
At Sune, Fabien will bring a style shaped by the breadth of London’s restaurant scene, with a particular focus on seafood, spice and produce-led cooking. His appointment marks an exciting new chapter for the restaurant, continuing its focus on generous hospitality, relaxed service and confident, flavour-led menus.
Opened in late 2023 by Charlie Sims and Honey Spencer, alongside business partner Spencer Large, Sune is shaped by more than 35 years of combined restaurant experience, balancing considered cooking and service with the warmth and ease of a restaurant designed for regulars. Sims’ background at Noma, Lyle’s, Mãos and Brawn informs Sune’s relaxed but highly considered service, while Honey Spencer’s distinctive, natural-leaning wine list draws on years of travel, consultancy and wine buying across restaurants including Osip, Akoko and Studio Paskin.
