The Staff Canteen

Endo Kazutoshi is a sushi master and the chef owner of one Michelin-starred Endo at the Rotunda.

The White City restaurant, located on the top floor of the former BBC Television Centre opened in April 2019. 

Second to LSR group's burger and ramen restaurant, Ichibuns Super Diners,  the Rotunda venue was opened in partnership with his existing collaborators, Benjamin Goldkorn and ex-Nobu Busaba Eathai’s Robin Leigh.

Career so far 

The chef was born in Yokohoma, Japan's second biggest city in population terms after Tokyo.

Endo-san is a third generation sushi master and learnt his trade from his grandfather, who owned and operated a popular local sushi bar. He learnt the centuries-old Edomae technique in Tokyo, where the tradition was born 200 years ago. 

The chef spent two years working in famous Catalan restaurant, El Bulli, and between 2007 and 2015, was the executive chef for Japanese dining group, Zuma Restaurants, where he oversaw the offering at restaurants in London, New York, Miami, Dubai, Hong Kong and Istanbul. 

In 2016, Endo held a one-off event at Kisetsu,Jason Atherton's private dining space at theJapanese izakaya restaurant, Sosharu, in Clerkenwell. 

In 2018 the chef held a six-week pop-up at The Berkeley Hotel, where he served a fifteen-course omakase menu in a space designed especially for the event.

The restaurant's catch phrase, 'Sushi in the Clouds,' like The Rotunda, refers to its location at the top of the BBC TV Centre in White City. 

Omakase-style dining allows for 16 guests to sit at the chef's table - a Hinoki wood sushi counter – to watch Endo and his team prepare sushi using fish predominantly sourced from Scotland, Cornwall, and Brittany. 

The water used to cook the Yamagata rice is shipped in barrels from the chef's home village and the rice vinegar is home-made. 

Endo at the Rotunda offers two seasonal Omakase options for dinner and lunch, as well as an à la carte menu.
