When taking the helm at The Dining Room at Whatley Manor, Chef Ricki Weston wasted no time in instilling sustainable practices at every level of his culinary ventures. He forged strong partnerships with local farmers, fishers, and artisans, ensuring that only the freshest, ethically-produced ingredients graced his menus.

Ricki's culinary artistry elevates traditional flavours with a modern twist, all while respecting the ingredients' integrity. The Dining Room implements innovative strategies to combat food waste, including recycling, composting, and donating surplus food to local charities. Its holistic approach to sustainability has earned accolades and serves as an inspiration for others in the culinary world.
 

 

Upon receiving a Michelin Green Star, Ricki commented: "Our kitchen is designed to be as efficient as possible, and we have 4 beehives and our own orchard. We use local, ethical producers in our supply chain and have negotiated with suppliers to reduce packaging. Our food waste is turned into methane gas."

By embracing a farm-to-table philosophy, he not only celebrated seasonal flavours but also supported the local economy and reduced carbon emissions associated with transportation.

Surrounded by twelve acres of formal grounds, Whatley Manor is a delightful Cotswold stone house, dating back to 1802, and offers captivating countryside views. Complimenting the setting, Weston’s menus showcase a harmonious blend of bold flavours and innovative techniques that highlight the natural essence of each ingredient.
