The Staff Canteen

Josh Angus is the driving force behind the kitchen at Hide, the acclaimed Mayfair restaurant awarded a Michelin star just five months after opening in 2018.

As chef director, he leads a brigade of over seventy chefs across the Hide group, bringing a combination of precision, calm leadership and creative excellence to the role.

Early beginnings

Originally from Sheffield, Josh trained in classical French cookery at Le Manoir aux Quat’Saisons, where he worked under Raymond Blanc.

This early foundation of discipline and finesse would shape his entire culinary outlook. He then moved abroad to work with two Michelin-starred chef Shane Osbourne in Hong Kong, a period that broadened his approach and deepened his understanding of international kitchens.

Returning to the UK, Josh worked in London’s Elystan Street before taking on a unique role as private chef to the US Ambassador. Cooking for figures such as Jimmy Carter and Ed Sheeran, he learned how to perform under pressure, develop world-class menus, and tailor experiences to the highest level of expectation. He later joined Belazu to work in product

development, giving him rare insight into sourcing, supply chain, and the technical aspects of ingredient innovation.

Joining hide 

Josh joined Hide in 2017 ahead of its launch, working closely with Ollie Dabbous and Hedonism Wines to create a restaurant that was both serious about food and dramatically elegant.

Hide currently holds one Michelin star, which it was awarded in the Michelin Guide Great Britain & Ireland 2025.

Josh's cooking reflects a deep respect for ingredients and the natural seasons, with a modern British approach shaped by classical technique. At Hide, dishes are built with subtlety and detail - a scallop might be gently roasted over embers and served in its shell, while desserts might arrive amid a swirl of dry ice or nestled in leaves from the restaurant’s rooftop garden.

He ensures the front-of-house and beverage teams are integrated into the restaurant’s storytelling. With Europe’s largest wine list available via the partnership with Hedonism Wines, the guest journey at Hide is as much about narrative and emotion as it is about flavour.
