The Staff Canteen

Chef Mark Poynton has long been a familiar and respected name in the UK’s fine dining scene.

From his days as a front-of-house team member to becoming a Michelin-starred chef with his own establishments, his journey has been marked by a fierce commitment to flavour, sustainability, and hospitality that puts both staff and diners first.

early beginnings

Mark started his culinary career at 15 years old working part-time as a waiter in the Queen Hotel Chester.

His first steps into the industry were taken not in the kitchen but on the restaurant floor. He began as a waiter but quickly transitioned into the kitchen under the mentorship of Ian McDowall.

Within six months he’d moved into the kitchen under executive chef Ian McDowall. He then worked 18 months with Paul Kitching at the Juniper restaurant in Altrincham, followed by seven

years with two Michelin-starred , Daniel Clifford at Midsummer House in Cambridge.

In 2009, Mark took his first head chef position at Alimentum, taking over the business in 2010. Alimentum currently holds a Michelin star and three AA rosettes.

In 2020, he opened MJP @ The Shepherds, an intimate tasting-menu restaurant set in a former pub in Fen Ditton, Cambridge. 

That project has since evolved, and in July 2025 he is set to reopen the site as The Ancient Shepherds, pairing an 18-seat tasting-menu restaurant. 

ACCOLADES

Mark recently gained Michelin status for a second time at the 2025 Michelin Guide Awards in Glasgow since being awarded a star in 2012.  

Caistor Hall also quickly gained acclaim, being listed by local outlet Muddy Stilettos among Norfolk’s Michelin-starred restaurants for 2025
