Who would have thought that we would be helping some of the country’s best chefs with presentation concepts involving aluminium trays and enamel dishes for their latest creations, rather than beautiful bone china. But here we are, working on the latest trends and loving every minute of it! What’s so exciting about now is that chefs are embracing the changes with relish. Maybe it’s not fine dining as we knew it but it’s fun, it brings new life to the restaurant scene and it’s really, really enjoyable. Maybe ‘Social Dining’ as deftly delivered by Jason Atherton, led the way Whole Piri-Piri Spatchcock Chickenso brilliantly with his unique take on how to combine fine-dine standards without the fuss; but now a place just doesn’t have street cred if it doesn’t serve a great burger and Kimchi slaw. Our American friends have given us a great gift but our great British chefs have taken the burger into quite a different league. Over the coming months, we are going to highlight some of the trends we see popping up in the market and show you how we interpret them in products to show great food off to its best advantage. Sharing platters are big news and we have created some great deep platters out of pewter, that just gets better with age. This whole Piri-Piri Chicken dish could be served in the dish on a stand to create height and a real Smoked Duck, Potato Cake and Kimchitalking point. This time, we are showing you the best in what we can only term ‘Dude Food’ (sorry ladies). Yes, it has the classics of pulled pork and corn bread from the fantastic team led by Chris Finnigan at Lane 7, an amazing Boutique Bowling alley in Newcastle-upon-Tyne ; but it also takes a turn towards the great innovation in home-smoked meat, from our friend Neil Rankin at the rather brilliant Smokehouse in Islington.
