Member of the month July 2025: Michael Balding
Here at The Staff Canteen, we feature a different member every month who we think deserves to be celebrated - this month’s winner is Michael Balding.

Michael works as head chef at Acanteen in Chelmsford and has been a member of The Staff Canteen since February 2020.

ACanteen is a popular independent bar and restaurant located at 35 New London Road, Chelmsford.
Family‑run since 2001 by a mother‑and‑daughter team, it’s known for its welcoming atmosphere, all‑day dining, drinks and live events - including club nights, jazz and comedy showcases.

To get to know a bit more about Michael, we asked him some quick-fire questions to finish.
Name a comfort food that isn’t considered ‘cheffy’ but that you love to eat
“I do like those tins of beans and sausages you get in the supermarket - that would probably have to be it.”
What do you like about being a part of The Staff Canteen?
“Just the community - being able to share your ideas and use Staff Canteen for inspiration. It’s a great source of information.”
What is the most important lesson you’ve learnt as a chef?
“Be organised. Take your time. Concentrate on what you’re doing - ignore what’s going on around you.”
What are your hopes and plans for the future in hospitality?
“Just carry on learning, help provide knowledge to more inexperienced chefs, and help the industry grow.”
