​Here at The Staff Canteen, we feature a different member every month who we think deserves to be celebrated - this month’s winner is Rory Lovie

As thanks for being a regular and longstanding contributor to The Staff Canteen, Rory will receive a TSC mug, a signed copy of three Michelin-starred chef Quique Da Costa's cookbook, 3, and will be entered in our Member of the Year 2020 competition.

Bridgeview Station Restaurant, Dundee, Head Chef.

2. What is your cooking style and what should people expect from the food on your menu?

My style of food is very simple. I like to cook tasty food using local seasonal produce which reflects in my menu.

3. What is your favourite dish to cook and why?

It varies of what is in season, lately I loved the hake dish we had on the menu recently which came with a Ayrshire Bacon and Pearl Barley.

4. Name a food item/dish/ingredient that isn’t considered “cheffy” but that you love to eat?

Porridge! I love oats. They are my desert island food! 

5. What do you like about The Staff Canteen?

For me it's the best platform out there for chefs in my opinion! It's always update on what's happening in the industry and the app is also good for having a look at some of the dishes the other chefs are posting. 

6. What are your plans for the future?

God knows. I have been at Bridgeview Station for six years now and I am still happy but maybe one day I will have my own place. We will see. 

7) We know there are some tough months ahead and that can make planning difficult, but with a vaccine on the horizon, what are you most looking forward to doing when things are 'normal' again?

Getting back to eating out! I haven't eating out since March! I just haven't had the time to do it so that will be my first thing on the agenda.
