Here at The Staff Canteen, we feature a different member every month who we think deserves to be celebrated - this month’s winner is Peter Czarnocki.

1. Current place of work, position

I’m the owner and founder of Gourmand Pierre-Private Dining operating in Northamptonshire, Bedfordshire, Buckinghamshire and Leicestershire.

2. What is your cooking style and what should people expect from the food on your menu?

 I am passionate about Nordic cuisine flavours. I love simplistic food that presents no more than 3 flavours on the plate, well balanced with textures, flavours and colours. I like mixing classic cooking techniques like smoking, curing, pickling, fermenting with some modern techniques.

3. What is your favourite dish to cook and why?

Making desserts, pastry and any kind of sweets, experimenting with classic desserts and putting some twist on them.

4. Name a food item/dish/ingredient that isn’t considered “cheffy” but that you love to eat?

Dirty burgers 

5. What do you like about The Staff Canteen?

The Staff Canteen website is very useful, helping all of us expanding horizons. Many chefs can share food pictures, recipes, videos, reviews. I really love it!

6. What are your plans for the future?

My main plan is to keep developing my private dining business. I would like to share my knowledge, passion for real food and experience it with the others. Stay tuned as Gourmand Pierre is about to start new exciting projects very soon!

7. How has the year of Covid-19 been for you, has your career stayed on track or has it taken a different direction?

We all need to adapt to the new situation. I lost my job in April so I’ve decided to start with a new business, something unusual and work for myself. Private dining is a great option of having quality food at your own home with a restaurant service, wine pairing, menus etc. I think it’s a great alternative to the restaurant dining in current COVID-19 situation. During your dining experience, you can interact with me, try bespoke menu which means you can decide what ingredients you would like to see on your plate (with my suggestions). Also it’s much more fun and very relaxing for both sides. You guys should try it!
