How to cut Linguine pasta by chef Luke Holder. Luke shows us how to roll and then cut Linguine pasta, either on a machine or using the traditional method, allowing for even sized strips of the fresh pasta.

Before you place the pasta through the machine, it needs a slight dusting on both sides. You will need to feed it through nice and slow and you'll feel it starting to move slowly so

you just need to guide it through with your hands and then you have one portion of linguine.

This is a spaghetti chitara, we take our large lasagna sheet and we take a rolling pin and we lightly press and roll. We remove the outside edges and slide the rolling pin up and down the strings. Tap lightly and you have lovely, fresh linguine.
